Procedure
Heat a small saucepan over medium heat and add butter. When butter is sizzling, whisk in the flour and stir for 1 – 2 minutes until mixture is golden and fragrant. Add the beer and milk, whisking well tocombine. Lower the heat and add cheese, stirring until totally melted and smooth. Season with salt and pepper and set aside. Heat the pulled pork to 165 degrees. Heat a large skillet or electric griddle to medium heat. Butter the outside sides of the bread and place butter side down in the skillet. Top 2 pieces with pork and then cover with cheese sauce. Cover with the top and press slightly to hold together. This cooks quicker than a traditional grilled cheese because the ingredients are already hot. Cut once on a bias and serve.
