Faro Tabouleh With Chicken
Ingredients
- 2 CUPS CHANDLER’S MAKE YOUR OWN PULLED CHICKEN
- 2 CUPS FARO
- ½ CUP DRIED APRICOTS, ½ CUP SLICED ALMONDS, ¼ CUP PINENUTS
- ¼ CUP SALTED SUNFLOWER SEEDS
- ¼ CUP EXTRA VIRGIN OLIVE OIL
- 4 TABLESPOONS FRESH LEMON JUICE
- 2 CUPS CHOPPED FLATLEAF PARSLEY
- 1 CUP CHOPPED CILANTRO
- ½ CUP CHOPPED MINT
- 1 CUP CHERRY TOMATOES, HALVED
Procedure
Boil the faro in 4 cups of water with a pinch of salt until soft. Drain and cool. Plump the apricots by covering with hot water for a few minutes and then cut them in quarters. Toast the almonds and cool. Whisk the olive oil and lemon together in a small bowl. Toss all ingredients except Chandler’s Make your Own Pulled Chicken together in a bowl with the dressing. Gently fold in the chicken and let sit for about a half hour, tossing once or twice before serving.
