Ingredients

Ingredients:

2# Chandlers Pulled Pork (diced or shredded)

1 cup diced onion

2 cups diced green chilies (use your favorite, or a combination of any chilies to create the heat / flavor profile you like)

1 cup diced yukon gold potatoes

4 cups chicken stock

2 Tbsp. ground cumin

1 tsp ground coriander

1 clove minced garlic

Hot sauce to taste (optional)

Salt and pepper to taste

Shredded cheddar cheese, sour cream and cilantro garnish

Procedure

  1. Sauté onions in a small amount of olive oil, add garlic and peppers and continue to sauté till tender.
  2. Add spices, chicken stock and potatoes and cook till potatoes are almost tender.
  3. Add pork, season with salt, pepper and hot sauce if desired
  4. Ladle into cup or bowl, garnish with cheese, sour cream, and cilantro
