Thai Chili Chicken and Pickled Pigs Feet With Creamy Cilantro Avocado Sauce
Ingredients
- 2 CUPS CHANDLER’S MAKE YOUR OWN PULLED CHICKEN
- 1 CUP PICKLED PIG’S FEET MEAT PULLED FROM THE BONE
- 1 CUP FRANK’S SWEET CHILI SAUCE, 3 TABLESPOONS TERRIYAKI SAUCE
- 1 LARGE ONION, 1 TABLESPOON EACH MINCED GARLIC AND GINGER
- 1 RED PEPPER, 2 CUPS SLICED NAPA CABBAGE, 2 STALKS CELERY
- ¼ CUP CHOPPED CILANTRO, ½ CUP LARGE SLICED SCALLIONS
- 1 CUP CALAVO AVOCADO PULP, ½ CUP SOUR CREAM, 2 TABLESPOONS LIME JUICE
- FRANK’S REDHOT SIRACHA CHILI SAUCE
- STEAMED JASMINE RICE
Procedure
- Cut the onion and pepper on a bias making ½ inch diamonds.
- Cut the celery length-wise once and slice it on a bias.
- Slice the napa into ½ inch slices.
- Saute the vegetables with the ginger and garlic.
- Add the frank’s sweet chili sauce and terriyaki sauce.
- Simmer and fold in the chandler’smake your own pulled chicken, pickled pigs feet, cilantro and scallions.
- Make the sauce by combining the avocado, sour cream, lime juice, 1tablespoon of cilantro and frank’s redhot siracha chili sauce to taste.
- Serve over steamed jasmine rice topped with the cilantro avocado sauce.
